Super Easy Banana Muffins using leftover Banana!

Ali W here. If you often have a leftover banana or two in your fruit box, you know the kind, the banana that’s gone a bit ripe to eat, then why not make these easy banana muffins that are light too. If you have more than one banana, then multiply the recipe.

Makes 5-6 muffins.

You’ll need:

1 ripe banana

1 egg

1 tsp baking powder

40g of melted butter

125g flour

1 tsp cinnamon powder

50g sugar

1 tsp ginger powder

Pinch of salt

How to:

Just place everything in a bowl and mix well with a fork, then with a spoon. The bicarb will make it lift, so stir well, and then place into muffin cases, don’t overfill them.

Bake in a 150c (fan) oven on the bottom shelf for about 20-25 mins. Serve right away or store air-tight for 2-3 days. The smell is amazing! Enjoy. Ali W.
