Bruschetta using up Leftover Bread!

Ali W here! This is a tasty snack that I’ve written about before on our social media, and it cleverly uses up any leftover bread – it can be eaten hot, or cold (nice as a picnic) and is a real favourite of ours. I had the added bonus of receiving some absolutely amazing basil in my veg box, straight out of our own polytunnel, so this batch was truly extra special. I also had a few tomatoes from my own organic plant. Bonus! This batch made about 13 small ones, you need about a third of a leftover loaf depending on what size you have, of course! Just increase the quantities.

How to:

Get some leftover bread, slice it thinly and placed on a baking tray.

Mix together 2 tablespoons of tomato puree, 1 garlic clove, crushed, and some salt. Spread thinly on the bread.

Sprinkle with chopped basil and small chunks of fresh tomato, then dust over some dried oregano.

Drizzle well with olive oil.

Bake at the bottom of your oven on about 180c (fan) for about 10 mins until they are a little crispy.
